I haven’t tried this recipe yet but it looks absolutely fantastic. You swap out the eggs in a normal frittata for blended tofu and combine it with all of your favourite vegetables and traditional Mexican flavours.

I cannot recommend trying this highly enough!

Vegan Enchiladas – With Mushroom, Kale & Quinoa By Gene Hamshaw

I do love oven cooking. Once you have everything set up, it is basically set and forget cooking. This vegan enchilada recipe is not only simple to prepare, but it is a true crowd pleaser.

It is filling, textured, has complex flavours and can be adapted to suit your own palette. I love my food spicy, for example.

Vegan Mexican Chocolate Cake From

Bear in mind this is a dessert, it is a cake and it is not to be eaten all the time. It is a treat. A once in a while treat.

Using cayenne pepper, balsamic vinegar and a touch of salt this cake takes on some subtle flavours that give it a much more unique taste in your mouth than a normal chocolate cake.

The glaze is a combination of chocolate and strawberries which also gives the whole thing a luxurious, fresh taste.
